Plant Based Basel Pesto
Since starting a plant based diet I have never been able to find a suitable recipe for one of my summer favorites – Basel Pesto. It always came out rather harsh and dense. Then I tried it with Macadamia Nuts and what a difference. Creamy so so good.
INGREDIENTS
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1/3 cup chopped macadamia nuts
- 1/4 cup pine nuts
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 6 cups packed basil leaves
- Juice and zest of 1 lemon
- 3/4 cup olive oil
Method:
- Toast the Macadamia Nuts and Pine Nuts, be sure to keep an eye on them, 10 minutes at 350 should do it. They will be fragrant when ready.
- Add all ingredients except for the basil, lemon juice, lemon zest and olive oil to the food processor and give a quick whir, about 10 seconds.
- Add the basel leaves, lemon zest, lemon juice and turn on the food processor and slowly drizzle in the olive oil .
- Enjoy on Pasta, with fresh vegetables or smeared on a baguette
