Plant Based Basel Pesto

Since starting a plant based diet I have never been able to find a suitable recipe for one of my summer favorites – Basel Pesto. It always came out rather harsh and dense. Then I tried it with Macadamia Nuts and what a difference. Creamy so so good.

INGREDIENTS

  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1/3 cup chopped macadamia nuts
  • 1/4 cup pine nuts
  • 3/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 cups packed basil leaves
  • Juice and zest of 1 lemon
  • 3/4 cup olive oil

Method:

  1. Toast the Macadamia Nuts and Pine Nuts, be sure to keep an eye on them, 10 minutes at 350 should do it. They will be fragrant when ready.

  2.  Add all ingredients except for the basil, lemon juice, lemon zest and olive oil to the food processor and give a quick whir, about 10 seconds.

  3.  Add the basel leaves, lemon zest, lemon juice and turn on the food processor and slowly drizzle in the olive oil .

  4. Enjoy on Pasta, with fresh vegetables or smeared on a baguette
